Breakfast: Oven-Roasted Grated Cauliflower

Ingredients:
- ½ small yellow onion
- 1 garlic clove
- 2oz (57g) chorizo
- 1 cup cauliflower, chopped
- 1 tablespoon heavy-cream
- ¼ teaspoon dried basil
- ¼ teaspoon dried oregano
- Pinch of pepper
- 1oz (28g) grated mozzarella cheese
- 1 tablespoon freshly chopped dill
- coconut oil to grease the baking dish
How to make:
- Preheat the oven to 375°F (190°C) and prepare a baking dish greased with coconut oil.
- Peel and mince onion and garlic. Thinly slice the chorizo.
- Heat a skillet over medium heat, and add chorizo, onion, and garlic. Cook while stirring for a few minutes.
- Transfer the chopped cauliflower to a mixing bowl, add heavy cream, dried basil, dried oregano, pepper, and whisk everything.
- Add chorizo mix, whisk again and transfer everything to a greased baking dish.
- Top with grated mozzarella cheese and bake it for about 35-40 minutes.
- Allow the dish to cool down for a few minutes, sprinkle with freshly chopped dill, slice and serve.
