Dinner: Zucchini Basil Cashew Salad with Ricotta

Ingredients:
- 1 small zucchini
- 1 cup (24g) fresh basil
- 1 teaspoon olive oil
- 1 tablespoon crumbled cashews
- ¼ cup (62g) ricotta cheese, crumbled
- 1 tablespoon lemon juice
- pinch of pepper
How to make:
- Cut the zucchini into slices and finely chop the basil.
- Heat a pan grill over medium heat and grease it with olive oil.
- Add zucchini slices and grill for 2 or 3 minutes on each side.
- Add basil, cashews, ricotta cheese, and lemon juice in a medium bowl. Season with pepper and mix to combine.
- Transfer to a serving plate and enjoy!
