- ½ small beet

- 1 cup (30g) spinach
- 1oz (28g) walnuts
- 1 teaspoon extra-virgin olive oil
- 1 tablespoon lemon juice
How to make:
- Peel the beet and cut it into small cubes. Cut feta into cubes.
- Add spinach to a plate, top with cubed beet, feta cheese, walnuts, and drizzle with olive oil and lemon juice.
