Dinner: Stuffed Bell Pepper

Ingredients:
- 1 teaspoon olive oil
- ½ small onion
- 4oz (113g) lean ground turkey
- 1 large red bell pepper
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon ground cumin
- dash of salt and pepper
- 2 teaspoons reduced-sodium cheddar cheese
How to make:
- Preheat the oven to 400ºF (200ºC) and prepare a glass baking dish lightly greased with olive oil.
- Add olive oil to a medium pot and heat over medium-high heat.
- Add onion and saute for about 2-3 minutes.
- Add lean ground turkey, season with basil, oregano, cumin, salt, and pepper, and cook while stirring for about 5-7 minutes.
- Cut bell pepper in half and remove the seeds. Transfer into the prepared baking dish.
- Fill each pepper half with the meat mixture and top with cheddar cheese.
- Transfer the baking dish to the preheated oven and cook for 35-40 minutes.
