Ingredients:
- 3oz (85g) chicken breast, skin on, boneless
- 1 tablespoon olive oil
- Dash of salt and pepper
- ½ cup (18g) shredded lettuce
- 1 teaspoon parmesan
- 1 oz (28g) Macadamia nuts, raw, crushed
How to make:
- Slice the chicken breast into 1-inch (2.5 cm) pieces.
- Mix the olive oil, salt, and pepper and rub them into the chicken breast.
- Heat a medium saucepan and cook the chicken for about 10 minutes until cooked through.
- In a medium bowl, add the shredded lettuce.
- Top with cooked chicken breast, parmesan, and macadamia nuts.
